Yesterday I knew I wouldn’t feel like cooking after spending so much time prepping everything, so in the morning I threw a roast and some onions, potatoes, and carrots in the crock pot and called it a day. I did, however, decide to make a salad with some of the spinach leaves and chives. I added some raisins and walnuts and raspberry vinaigrette. The boys had ranch dressing on theirs. Tonight I plan to make another salad with the lettuce and spinach, and put some of the blue cheese and strawberries on it. Last night I tried some of the chevre with crackers…mmmmm. It was really creamy. Who knows, I may turn into a foodie after all!
